Lately I've been addicted to this breakfast and I can't get enough of it. Breakfast is one of those meals that, if given a slack routine, can become none existent. Which is terrible because it really is crucial for optimal health.
Blah blah blah. I know, you've heard this all before. But to review, here are 3, just 3, reasons breakfast is best!
1. Weight Loss. Seems counter productive but when you eat breakfast it not only kicks you metabolism into gear to start working, it also halts any mid morning snack/sugar binges. Yes, that means the office vending machine, the drive thru or extra 'junk' you might pick up at the grocery store while shopping.

2. Smarter. When you eat a healthy breakfast it aids the brain in so many ways. Just think about it (pun intended). Memory, concentration, mood, stress level. All are improved with a morning meal. Just like any meal, the brain needs energy to be in top performance.

3. Future is looking bright. It's hard to see the big picture when we are consumed by day to day obligations, responsibilities and distractions. But take a moment and think about how you want to feel when you're older. Something as simple as eating breakfast actually reduces obesity & lowers the risk of high blood pressure, heart disease and diabetes. This information coming from the National Health Service.

So with those quick reminder, here is my current breakfast addiction. Just a few minutes of work and you'll have a delicious, healthy and beneficial meal.
*serves 2 people. Use all organic ingredients.
- 1.5 cups russet potato, cubed
- 1/2 green pepper, diced
- 1/2 Spanish onion, diced
- 2 tbsp butter
- 4 organic free range eggs
- 1 tomato, diced
- 2 green onions, chopping for garnish
- 1/4 cup cilantro, chopped for garnish (optional)
- salt & pepper to taste
- In a frying pan, heat stove to medium heat. Melt butter and add potatoes, peppers and onion. Sauté until potatoes are cooked through and peppers/onion are softened.
- While step one is cooking, boil a shallow pan of water (about 2 inches deep), and poach eggs soft. Poaching eggs can be tricky if you've never done it before. One trick is to add a splash of white vinegar. That helps keep the egg whites together.
- When your hash is done, divide onto two plates and add the diced tomatoes.
- Place your two poached eggs on each plate, sprinkle with green onion and cilantro (optional). Season to taste with salt and pepper.
